Easy Yummy Lentils

This easy lentil dish has a secret ingredient - fresh mint. It is unbelievably easy to make for something so yummy. This recipe is on request. Thanks for requesting recipes.

Ingredients

  1. 1 cup lentils (soaked for 2 hrs) in 2 cups of water
  2. 1 cup diced pumpkin
  3. ½ can coconut milk
  4. ½ cup chopped fresh mint leaves
  5. 1 tablespoon freshly grated ginger
  6. ¼ teaspoon cumin powder
  7. ¼ teaspoon turmeric powder
  8. 1 teaspoon coriander powder
  9. ½ teaspoon curry powder
  10. 2 tablespoon oil
  11. 2 tablespoon freshly chopped coriander for garnish

Directions

  1. Heat a saucepan on medium flame
  2. Add oil, cumin powder, curry powder, ginger paste and saute for 1/2 min
  3. Add pumpkin, coriander powder, turmeric powder and saute for 1 min
  4. Add soaked lentils, stir gently, cover pan and cook for 5 mins
  5. Add salt, coconut milk, mint, stir gently, cook for further 3 mins
  6. Garnish with fresh coriander. Serve hot with chapati or rice
