Pasta O Pasta

This quick and easy vegan pasta dish was a special request. Hope all who watch and make it, enjoy it as much as we did. Here's to comfort food pasta!

  1. 250 grams or ½ lb dry penne pasta
  2. 1 tablespoon olive oil
  3. red chilli flakes to taste
  4. 1 teaspoon salt
  5. 8 ounces of diced tofu cutlets
  6. 1/2 cup fresh basil leaves
  7. 1/3 cup fresh parsley
  8. 4 large diced red tomatoes
  9. 1 cup chopped green cabbage
  10. 1 diced green bell pepper
  11. 4 cups chopped spinach leaves
  12. 1 teaspoon dried oregano


  1. In a large pan, heat 2 litres of water, add olive oil and salt.
  2. Cook pasta for 20 mins. Drain and reserve 1 cup of pasta liquid.
  3. In a thick bottom pan heat oil, add red chilli flakes, cabbage, green bell pepper, diced tofu, tomatoes.
  4. Sauté for a few minutes and finally add oregano, salt, parsley, cover pan and cook for 5 to 8 mins.
  5. Add spinach and let it wilt. Add pasta, basil and the reserve liquid.
  6. Cook for a further two mins. Serve hot or cold.
