This delicious tofu and spinach filling in a crispy filo dough makes it a must for any gathering.

Ingredients
1roll filo dough (unroll the filo sheet in a wet towel)
1tablespoonblack pepper powder
½teaspooncayenne pepper powder
½teaspoonsalt
1teaspoonItalian seasoning
½teaspoonoregano
1block firm tofu (crumple using hands)
1cupchopped cabbage
1cupfinely chopped carrots
1box frozen spinach (remove all the water)
2tablespoonbread crumbs
½cupmelted butter
1tablespoonolive oil
Directions
For the filling
Heat a pan in a stove and add the olive oil to the pan. Once heated add the chopped cabbage and let it cook for few mins.
Add Italian seasoning and oregano to the cabbage and stir well and let it cook.
Add the chopped carrots and mix it well.
Mix the crumpled tofu to the above mixture and stir gentle for few seconds.
Add the cayenne pepper, black pepper and salt to the mixture and stir well.
Add the Spinach (tip: make sure there is no water in the spinach) and mix all the ingredients together.
Once cooked, let the filling cool down.
For the Roll
First cover an oven tray with a foil sheet.
Next brush the butter in a cutting board
Take one filo sheet and place it on the cutting board.
Gently brush the butter (small portion) on the filo sheet and sprinkle some bread crumbs around the sheet. Take another filo sheet and place it on top of the first sheet and repeat the brushing the butter and bread crumbs steps. Add another filo sheet and repeat the brush the butter and sprinkle the bread crumbs steps. (Tip: can add 3 or 4 sheets depending on individual preference. When adding more sheets repeat the brushing the butter and sprinkling bread crumbs steps).
Take 2-3 table spoons of the filling mixture and place it on one side of the sheet (towards your side) leaving an inch gap in both sides.
Fold the both side of the sheet (where you left some gap) and apply some butter and sprinkle some bread crumbs.
Now start rolling the sheet from your side towards the other side of the roll until it’s rolled nice and tight. Apply butter whenever required.
Gently place the rolled filo in an oven tray.
Preheat the oven at 375°F (190°C) and place the tray in the middle of the oven for 15-20 minutes or until the pastry is golden brown colour.
Remove the tray from the oven and place the pastry on a plate to cool down before serving.
