Ingredients

  1. Boiled potatoes (diced into cubes)
  2. Tomatoes (diced into cubes)
  3. Ground coriander
  4. Turmeric powder
  5. Cumin powder
  6. Garam masala
  7. Fresh ginger (chopped)
  8. Fresh coriander leaves (chopped)
  9. Asafoetida
  10. Salt
  11. 3-4 tablespoon oil (or butter)
  12. 1 cup hot water

Directions

  1. Heat the oil in a sauce pan and add the spices (asafoetida, cumin, turmeric, ginger and salt) and diced tomatoes (tip: you can replace tomatoes with cooked green peas or paneer or canned sweet corn). Sauté for few minutes.
  2. Add the boiled potatoes and stir the mixture. Close the pan with a lid and let it cook for few minutes
  3. Pour 1 cup of water and stir the mixture.
  4. Add some coriander leaves. Leave the pan on low heat for 5 minutes by closing the sauce pan.
  5. When the sabji is ready season it with some garam masala.
